I highly recommended "Nutrition for Health, Fitness and Sport" to exercise science and nutrition students. It's comprehesive yet not too technical. You may also want to order "Creatine: The Power Supplement" by Williams et al. (Human Kinetics 1999).PS. Melvin Williams has written a great book on sports nutrition. He takes a chapter to cover every nutrient including supplementation and athletic performance in regards to that nutrient.
